This recipe comes from the book Everyday Paleo: 1 lb grass fed ground beef 1 bunch kale chopped 1 white onion sliced 1/2 of a green, red, and yellow bell pepper sliced 1/2 cup pimento stuffed green olives 3 tbsp olive oil 1/2 tbsp ground cumin 1 tsp ground coriander 1/2 tbsp turmeric powder 1 tbsp dried oregano Pinch of saffron threads (optional) Sea salt and black pepper to taste 3 sweet potatoes 1 ripe avocado In a large skillet brown the ground beef. Add the bell peppers, onions, and olive oil and saute until the onions and peppers are tender. Add all of the spices and mix well. Add the kale and green olives, continue cooking stirring often until the kale is tender (about 4-5 minutes. Serve over mashed sweet potatoes with a side of sliced avocado. To quickly prepare the sweet potatoes, peel and quarter the potatoes and cook in a pressure cooker for 12 -14 minutes. I love this dish because I enjoy the pungent flavors of the spices and olives. Unfortunately the rest of my family does not, so I make one for me and another for them which doesn't include olives and minimizes the spices. I think I'm gonna go make some now!

Yesterday I asked my kids what they wanted for breakfast and my son said, "Hmmm...How about cookies?" As I mentioned in a previous post, we don't talk about certain foods as being "good" or "bad" for us, since we make everything using healthy ingredients. So we had cookies for breakfast! They took very little time to make and they tasted yummy! The recipe comes from OatmealWithAFork.com.

1 1/2 tablespoons coconut oil 1 cup sliced almonds 1/2 cup chopped walnuts 1/4 cup pepitas 1/2 cup shredded coconut 1/2 cup raisins 1/2 cup dried cranberries pinch of salt 3/4 teaspoon cinnamon honey as needed Directions: Melt coconut oil in a skillet over medium heat. Add almonds, walnuts, pepitas, and coconut to skillet. Drizzle nuts with honey and allow it to cook for a few minutes until the honey and oil cling to the nuts. Add remaining ingredients and stir to cover everything with oil and honey. Place on parchment paper to cool for one hour. This is enough for me and my two kids to each have a big bowl of cereal.
